
Spice up your food table this Super Bowl Sunday with more than just your average, everyday pot of chili. Add some variety for you and your guests by taking this simple and easy-to-make chili recipe and using it for an assortment of dishes. Garnishes are limitless and there are no rules for what you can top any of these chili dishes with. Get ready to impress your friends at halftime.
CHILI RECIPE
Ingredients
2 lbs lean ground beef
1 tbsp vegetable oil
2 cooking onions, chopped
2 cloves garlic, chopped
2 tbsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1 tsp granulated sugar
1/4 tsp salt
1 28 fl oz can tomatoes
1 19 fl oz can pinto or kidney beans
1 cup beef stock
2 tbsp red wine vinegar
2 tbsp tomato paste
Preparation
1 In a large pot or Dutch oven, heat the oil over medium-high heat — brown the beef.
2 Reduce the heat to medium; add the onions, garlic, chili powder, cumin, oregano, sugar and salt, and cook, stirring often, until softened — about 5 minutes.
3 Once the onions and garlic are softened, add the tomatoes, beans, beef stock, vinegar and tomato paste — bring to boil.
4 Reduce the heat to low; cover and simmer for 1 hour, stirring occasionally. Uncover and simmer, stirring occasionally until the chili has thickened — about 1 hour.
CHILI AND OLD CHEDDAR PIZZA
Ingredients
2 premade pizza shells
2 cups chili
1 lb old cheddar shredded
1 cup refried beans
Garnish options: diced tomatoes, diced avocadoes, red onion, green onion, sour cream, jalapenos, and salsa
Preparation
1 Spread the pizza shells with the refried beans, 1 cup for each pizza shell.
2 Spread the chili over the refried beans, 1 cup per pizza.
3 Top each pizza with 1/2 lb of cheddar each.
4 Bake in a pre-heated oven at 400° F for 15 minutes or until cheddar is melted and slightly browned.
5 Top with your favourite garnishes and serve.
CHILI AND HAVARTI JALAPENO POTATO JACKETS
Ingredients
12 potato skins cooked
1 1/2 cups chili
1/2 lb jalapeno havarti cheese shredded
1/2 cup guacamole
1/2 cup sour cream
2 tomatoes diced
Preparation
1 Place the potato skins on a foil or parchment paper lined baking tray and add 2 tablespoons of chili to each one.
2 Spread the jalapeno havarti evenly over the 12 potato skins.
3 Bake in a 400° F oven for 15 minutes or until the cheese is melted.
4 Garnish with the sour cream, guacamole and diced tomatoes.
SUPER BOWL CHILI POUTINEIngredients
2 lbs lattice fries cooked
2 cups chili
1/2 lb cheese curds
4 jalapenos
2 green onions
2 tbsps sour cream
1/2 cup salsa
Preparation
1 Place lattice fries on a large platter and spread the cheese curds over them.
2 Top the lattice fries with the chili.
3 Top the chili with the salsa.
4 Top the salsa with the sour cream.
5 Garnish the entire platter with the jalapenos and green onions and serve.
CHILI AND MONTEREY JACK CHEESE SLIDERS
Ingredients
24 sliders (mini hamburgers) on buns
1/2 cup chili
1 avocado peeled and sliced into 24 pieces
2 tomatoes sliced into 12 pieces each
1/2 cup salsa
1/2 lb Monterey Jack cheese shredded
Preparation
1 Top each slider with 2 tbsp of chili.
2 Top the chili with Monterey Jack cheese, then the Avocado, then the tomato, then the salsa, and serve.
