That’s all the Spanish you need to know to get through the day tomorrow. Either make your way to the closest Mexican restaurant or pick up a case of Mexican beer, a bottle of tequila and the essentials for a taco feast.
We could tell you to take the easy way out and buy a pre-packaged taco kit, but we have faith that you’ll be able to wrap up these Chipotle Shrimp Tacos (see below) with zero to no issues.
If you don’t like shrimp, no worries, you just can swap it out for any other protein.
Happy eating!
Yield: 12
Ingredients:
1 (12 ounce) package bacon, cut into small pieces
1/2 onion, diced
2 pounds large cooked shrimp - peeled, deveined, and cut in half
OR 2 pounds chicken or beef
3 chipotle peppers in adobo sauce, minced
12 corn tortillas
1 cup chopped fresh cilantro
1 lime, juiced
salt to taste (optional)
1. If you chose chicken or beef, pan fry or grill most of the way through. You will finish cooking it through in step 2.
2. In a different large, deep skillet fry the bacon over medium-high heat until evenly brown. Drain the bacon fat. Add the onions to the pan with the bacon and cook 5 minutes or until the onions are translucent. Stir in the shrimp, chicken, or beef and chipotle chiles; cook 4 minutes or until heated through.
3. Heat tortillas on an ungreased skillet over medium-high heat for 10 to 15 seconds. Turn and heat for another 5 to 10 seconds. Fill the heated tortillas with shrimp mixture. Sprinkle with cilantro, lime juice, and salt.
